Sophia Jensen, our Olympic athlete from the Outaouais region, has her sights set on the podium at the 2028 Summer Olympic Games. For every can sold, $1 is donated to Sophia to help support her journey toward achieving that goal.

Born in Edmonton, Alberta, in 2001, Sophia grew up in Chelsea, right here in our Hills. At the last day of elementary school, coaches from the Cascades Canoe Club visited her school to introduce the sport. That presentation sparked something special. She immediately asked her mother to enroll her in the club’s summer camp, and that was the beginning of her journey. The following year, she entered her first canoe races, and just four years later she claimed her first Junior World Cup title.
After earning numerous international honours, Sophia qualified for the 2024 Olympic Games in Paris, where she finished sixth in the C1 200 m event. Since then, she has continued to collect World Cup podium finishes and now has her sights firmly set on winning one—or even two—Olympic medals at the 2028 Games in Los Angeles.
When Sophia’s father, Olaf, president of the Cascades Club, approached us about brewing a beer to help support her Olympic campaign, we didn’t hesitate. We believe in making a difference in our community by supporting a local athlete—an international rising star who makes us all proud. For us, the answer was an immediate yes.
We wanted to create an original beer that remained, above all, an easy-drinking lager—one people would gladly come back to time and time again. Then Olaf told us about their family’s Dutch heritage, and everything clicked.
Traditional Dutch blond lagers are distinguished from their German and Czech counterparts by a gentler bitterness, a richer malt character, a smoother mouthfeel, and subtle biscuity notes. Our Sophia Jensen is inspired by that Dutch brewing tradition while being brewed entirely with ingredients sourced in Quebec.
Its foundation is Innomalt’s Pilsner Moderne malt, complemented by a touch of the maltster’s M2 malt to enhance its rich malt profile. A restrained addition of Magnum hops from Houblonnière Lupuline provides balanced bitterness, while Saaz hops from Jarret Noir add delicate aromatic character. Finally, Staffelberg yeast from Labo Solution Brassicole ferments the beer into a beautifully balanced lager that lets every ingredient shine.
